EASY LEMON DESSERT
2 eggs, beaten
juice of 1 1/2 lemons
1 cup sugar
1 cup whipping cream
1/2 cup graham cracker crumbs
Combine ingredients and cook in a double boiler until thick. Allow to cool. Whip 1 cup cream. Fold into the lemon mixture.
Cover a shallow square glass pan with graham cracker crumbs, or alternatively, use a glass pie dish. Spread the lemon custard mixture on top.
Refrigerate until ready to serve. Cut into squares if a square pan was used, or wedges if served from a pie dish.
This recipe has been a Summertime favorite which has been in our family for over 60 years.
Variation: These can be served in custard cups for individual servings.

QUICK AND EASY CHOCOLATE DESSERT
1 box chocolate cake mix
2 4oz boxes chocolate instant pudding
1 can cherry pie filling
2 sm. tubs coolwhip
Prepare cake mix according to directions on box in a 13x9 pan. Let cake completely cool. (Best if made night before.) Prepare pudding and chill until set.
Cut cake into 2x2 squares. In large dessert bowl, starting with cake squares, layer cake...pudding...cherry pie filling...whipped cream and repeat.
ENJOY!!! Can also use different variations. (ex...white cake, vanilla pudding, fresh blueberries and strawberries~ good for the 4th of July!!)
BLUE RIBBON FUDGE
2 1/2 c. sugar
1 sm. can evaporated milk (5 oz.)
6 oz. semi-sweet chocolate bits
1 tsp. vanilla
2 tbsp. butter
1 c. chopped walnuts
Mix sugar and evaporated milk together in heavy pan. Mixture will be very thick. Cook on low heat and watch closely until it begins to boil. Let come to full rolling boil. Then boil exactly for 5 minutes. Remove from heat. Then add chocolate, beating until melted and smooth. Mix in butter and vanilla by hand. Last mix in chopped nuts. Pour into buttered firm. Firms rapidly. 2 pounds.
OPERA FUDGE
1 pt. heavy cream
2 lbs. granulated sugar (4 c., 3 tbsp.)
1/4 tsp. cream of tartar
1/8 tsp. salt
1/2 stick butter
2 tbsp. vanilla
Mix all ingredients thoroughly, except vanilla and butter. Put in heavy aluminum kettle, put butter in when mixture starts boiling. Do not stir. Boil to soft ball stage on candy thermometer (235 degrees). Pour out on large buttered platter DO NOT SCRAPE kettle. Put 2 tablespoons vanilla on top. Set in cold place until just slightly warm in center. Beat or work with hands until creamy, consistency of creamy candy. Roll in balls and coat when cold. Melt dark chocolate over boiling water and add paraffin (small amount) to coat.
